Does the Mac go to any king of ”recovery mode” after turning off firevault, or does it requires any kind of password?

Since disabling FileVault requires the Administrator password the computer will not go into a recovery mode after disabling FileVault. If you have administrative privileges on the Mac you have control over the data on the Mac.
A separate security feature is Activation Lock which is available on newer Macs with a T2 security chip and macOS Catalina. It prevents a Mac from being activated after it’s been reported as lost or stolen by the owner via iCloud.
